Kitchen
The kitchen supplies cooked food to the food and beverage service department in hotels. Kitchen is very important part of the hotel. Kitchen is used for preparing food for the hotel guest. There are many departments in hotel and kitchen is also one the part o f the hotel.
All the preparation activities are carried out in the larder section, which includes butchery, fish monger, and cold kitchen. Salads, salad dressings, sandwiches, and juices are also prepared here. The cleaning, descaling, filleting and crumbling of fish is done by the fishmonger in the larder.
The sauce section is responsible for preparing sauce required sauces required for all meat, poultry, game dishes, with the exception of those that are plain roasted or grilled.
The roast section is responsible for providing all roast dishes of meat, poultry, and game.
The fish section is responsible for supplying all the fish dishes, with the exception of those that are plain grilled or deep fried.
The vegetable section is responsible for the preparation of all vegetable dishes.
The soup section prepare all types of soup such as consommés, creams, veloute, purees, broths, bisques, and international soups.
The pastry sections prepare all hot and cold sweets, like breakfast rolls, cakes, pastries and various desserts.
Besides these, there are section for special kinds of foods, like Indian, Chinese,and continental.
Executive chef, also known as Chef de Cuisine or head of the kitchen, is the chief of the kitchen, Sous chef, meaning ‘under the chef in French, reports to the executive chef and is responsible for scheduling of jobs an shifts and filling in when the executive chef is off-duty. Chef de parties, also known as a station chef or line cook, supervise a particular area of production in the kitchen. At the bottom of the organization structure is commis (French for cook), a chef who has recently completed a formal culinary training is still undergoing training. Chefs are assisted by kitchen porters and apprentices.

The housekeeping department is the operational department responsible for the cleanliness, maintenance, and aesthetic upkeep of rooms, public areas, back areas, and surrounding in hotels. Keeping room status information up-to-date requires close condition between the front office and housekeeping departments. The housekeeping prepares the a room status report, which is sent to the front office; the front office compare it with its records and the discrepancies are brought to the attention of the duty manager. This tallying is done after every shift. All the guest complaints and request are noted at the control desk, which is manned round the clock. The person at the control desk interacts with the concerned section/person to solve the complaints or to meet the requests. The progress is entered in a follow-up register, which maintain a record of all complaints.
Linen room, uniform room, and sewing room may be located separately or at one place depending upon the size of the hotel. Linen room maintains the supply of clean line while the uniform room takes care of the uniform of employees. Sewing room looks after all the mending work and utilize of discarded linen.
The hotel laundry is responsible for the cleaning and ironing of hotel linen, employees’ uniform and for the guest requirements of laundry. It may be located with in the hotel or at distant place. If present within the hotel promises, it is known as on-premises laundry.
The maintenance of hotel garden is also done by the housekeeping department.
Housekeeping is very important section of hotel, it will handle all the area of work that are related to its department. When a housekeeping department will clean a room a keeper will clean all the part of the room. Housekeeping staff will not responsible for cleaning the room, when he/she clean the room, also responsible for decorating the room as it previous design. Garden work, making of flower, etc works are also come under this department. There are also used many equipment to make the work easy.
Responsibilities of housekeeping:
- Cleaning of guestrooms
- Cleaning of corridors
- Cleaning of public areas
- Cleaning of pool and patio areas
- Cleaning of management offices
- Cleaning of storage areas
- Cleaning of linen and sewing rooms
- Cleaning of laundry rooms
- cleaning of the back house area e.g employee locker rooms
Front office
Front office is the first department of the hotel with which guests come in contact at the time of their arrival and is also the last department they interact with when they depart from the hotel. This department performs various functions like reservation, reception, registration, room assignment, and settlement of bills of a resident guest.
The guest remain in contact with the front desk throughout their stay for all kinds of information and help. The activities of front office include: processing the reservation request of guest, which involves making room reservation, amendments and cancellation; reserving guest at the time of arrival; making arrangements for the traditional welcome of guest; registration of guest and the assignment of rooms; handling guest luggage from the guest vehicle to the assigned room on arrival and from the guest room to the vehicle to the time of departure; accepting guest valuable and cash for keeping in safety deposit locker; delivering messages and mails of resident guest ; handling guests room key; guest paging; posting and verifying the room charges and other credit charges in the guest folio; providing information to guest about hotel product and service, and event or places of tourist interest; arranging postage and courier of mails and other documents; making travel arrangement like sightseeing tours or intercity travel for guest; managing the parking of guests’ own vehicles; preparing presenting, and selling guests’ bills at the time of departure; providing left luggage facility; changing rooms and upgrading if required, etc. As the front office is the contact point for guests, we can say that it is the never center of hotel operations.
It is an area where visitors arrive and first encounter a staff at a place of business. Front office receives information about the customers/Guests and will then pass this on to the relevant department within the company. Front office staff also deal with simple tasks, such as printing and typing tasks and sorting emails and other related task of department. The staff of front office looks smart and attractive which impact good impression toward the guests. Working staff should also be knowledgeable about his/her department. Salesmanship is very important for the staff of this department because front office is the first visiting area of the hotel.

Introduction of the food service industry
The food service industry engages itself in the provision of food and beverage, mainly to the people who are away from their homes for different reasons. Such people need accommodation with food and beverages if they are away for a short duration of time. The basic need of customers for food and beverages are met by the food service industry, which has been associated with lodging ever since people started traveling. People who move out of their houses for various reasons, such as job, education, business, leisure, medical treatment, sports, religion, and so on, depend completely on the food service industry for their meals.
Sector of food service industry
There are many types of food and beverage operations. They may vary in size, style, location, and the market they are catering to. From a wayside tea stall to an exclusive fine dining restaurant of a deluxe hotel, and from mid-day meal service for school children to meals for industrial workers, all come under the fold of the F&B sectors. It is necessary to classify all the F&B sectors for a better understanding of their operations.
The F&B sector can broadly be classified into following two groups according to the priority given to the provision of food and beverages.
*Primary catering sectors
*Secondary catering
sector Primary catering sectors: The establishments under this category are primarily concerned only with the provision of food and beverages to customers. The examples are food service outlets of accommodation sectors, various types of restaurants and takeaways.
Secondary catering sectors: The establishments in which the provision of food and beverages is not the mainly activity but a secondary or support activity are called secondary catering sectors. The examples are institutional catering, transport catering, catering service in theatres, amusement parks, department stores, and industrial catering. The primary activity of these units is not the provision of food and beverages to the clients the activity for which it is set up. For example, in transport business, taking the passengers to the destination on time an d scheduling the trips will be the primary activity. Some trains have a pantry car while others do not. Short duration flights may not provide in-flight catering services.

Introduction to the hospitality industry
What is the meaning of HOSPITALITY? There have been different definitions of Hospitality. Hospitality is the act of kindness in welcoming and looking after the basic needs of guests or strangers, mainly in relation to food, drink and accommodation.The hospitality industry is among the oldest commercial activities in the world. It is, in fact, an integral part of the largest business enterprises known as travel and tourism, which provide a wide range of travel related service, such as mode of travel, accommodation, food and drinks, recreational activities,and other facilities required by the modern-age traveler. hospitality seems to be a glamorous industry, but not many know that a tremendous amount of hard work goes behind the sheen and glitter that meets the eye.
Tourism is one of the most important commercial activities of the modern economy. The relationship between the tourism and hotel industries is also explained with reference to the diverse profile of the present-day client, who could be travelling for business, vacation, pleasure, adventure, or even medical treatment. an overview of hotels and their core departments is also provide for an overall understanding of hotel operation.
These day hospitality industry is grooming day by day. There are many needs and demand of people and hospitality is also one of them because people want to travel more for entertainment and many more.
When we talk about the “Hospitality Industry”, we are referring to the companies or organisations which provide food and/or drink and/or accommodation to people who are away from home.
The origin and development of hospitality industry is a direct outcome of travel and tourism. There are many reasons for which a person may: business, pleasure, further studies, medical treatment, pilgrimage, or any other reason. when a person travels few or more days, he may carry his clothes with him, its not possible for him to carry his food and home.
